Brilliantly managing a kitchen of 15 people for 4 years, he embodies commitment and culinary passion . Ready to take on any challenge, he energizes each department with his contagious energy.

Chief Nicolas, passionate about cooking for 18 years, has an insatiable thirst for learning and improving, placing the pleasure and satisfaction of his guests at the heart of his approach. With an exploration of various culinary styles, including an enriching experience of one year in Australian kitchens, he chose Mauritius as his homeland.
